A high-quality liquor is made from two varieties of cherries produced in Burgundy and harvested at their pinnacle of ripeness, around the end of June. For the manufacturing of whisky, tanks were two-thirds filled with berries and one-third with alcohol, and each variety was infused separately. After maceration at room temperature for 4-5 weeks, the extracts are blended with sugar, cognac, and brandy Kirsch.

The Joseph Cartron House has been in the Cartron family since 1882, with roots in Nuits-Saint-Georges, the heart of Burgundy’s great cru vineyards. For well over a century, the Joseph Cartron family company has created high-quality fruit liqueurs and distilled traditional eaux-de-vie (fruit brandies) while keeping up with modern technology. Preserving and improving the original flavour of the fruits is the talent of a renowned distiller. This is the culmination of years of experience and meticulous care beginning with the harvest. The fruit must have a high aromatic content, which can only be found in historic types, and because each harvest is unique, each manufacture requires meticulous attention to detail.
